Vegan MoFo: Great Grandma Cat’s enchiladas

We’re in a use what we have stage right now, the good thing is that our pantry is huge and always somehow manages to be full.  The bad news is that we are kind of used to eating on cravings and we get real whiny when we can’t.   Today I was thinking of one of our favorite meals, a veganized version of Matt’s sweet grandma’s enchiladas.   We miss them (and her!) dearly.

We’re out of a few of the major ingredients, so I simplified it up a bit and made due with what we have!  That meant black beans & brown rice.

This was totally worth using the last of our Daiya stash up!

And a bunch of Kale sauteed on the side.  Funny enough, Shae got majorly excited over the Kale since we haven’t had it in a week or so.  He ate nearly half himself!


Shae named his grandmas very literally.  Matt’s mom is Grandma Dog because she has shelties, and her mom was Great Grandma Cat because she had 2 fat, old grey cats that she loved dearly.   She was struck with alzheimers pretty quick, so when we needed to make these, it was a real hunt to find the recipe.  Luckily, Grandma Cat contributed her Enchilada Casserole recipe to her church cookbook back in 1984!  So happy to have found that.  And amused too.  Wow, were the 80’s an ugly time.

Let this be a PSA to you, organize your family recipes!  Get them from family members while you can!  So important to be able to pass them down.
