Vegan MoFo Day 13: Vegan Cupcakes Taking over my World, per usual

Day 13.

I know we’re supposed to be over cupcakes, but I am not. My family is not. My kids are most certainly not.

So vegan cupcakes are taking over my kitchen, per usual.

Tomorrow is Silas’ party, so tonight my counters are full of cupcakes and my mixer is is super overworked from all the buttercream whizzing. Usually for kids parties, I just do basic vanilla and chocolate recipes from VCTotW. This time I went with a whole bunch of Fluffy White Buttercream, but chocolate or peanut butter buttercream are both real popular with us. I love the more fancy cupcakes, but when I need to make a million of them, fast & simple is the way to go. Kids dig simple too, it seems.

I hold firm that there is no better way to convince someone that vegan food is amazing than with a cupcake. Isa and Terry gave us a whole arsenal of vegan goodwill and I will never stop using that.

I’m exhausted and covered in powdered sugar (okay, inside and out), so check out these photos.
